Simone Des Roches is a PhD candidate studying evolution and ecology. She’s also an artist and illustrator and over the years has spent some time drwing biological textbook style illustrations of fantasty creatures.
There are two ways to keep up with new art; via the blog which will suit fans of RSS, or via a Facebook page. I imagine that has a PhD student, time is precious, and art updates are uncommon but the Facebook page is certainly very popular.
